Three things are an outdoor set at the beautiful Greenbrier Resort, 311 lbs of meat, and a cord of wood. Barbecue University 3, starring Steven Raichlen of BBQ Bible fame, was filmed at the Greenbrier and will air on PBS in April or May of 2005.
